AMAZING DIY CHOCOLATE TRUFFLES

Valentines day is nearly here!


This year instead of an expensive night out at an overpriced (just because it's V day) restaurant, why not stay in, light some candles, sip a bottle of bubbly, and have supper at home.

Then get snuggled up with these 'devilishly' delicious homemade chocolate truffles.


Now, here comes the fun bit......

It's a DIY dessert that you can make together, getting down and dirty, never felt so good! Scooping and rolling the little truffles in their coatings, and of course licking the chocolate off your fingers afterwards.


Using Jamie Olivers Amazing DIY Chocolate Truffles recipe, and taking it to the next level with Ren Behan's fabulous flavoring inspiration.


Get ready to share some love this Valentines day.



YOU'LL NEED

300ml double cream
1 knob unsalted butter
finely grated zest of 1 clementine
300 g good quality dark chocolate (70% cocoa solids), broken into small pieces
1 pinch sea salt
1 splash brandy,vodka,or any other spirit of your choice (Gin and whisky work too)
1 Handful nuts
3 tablespoons cocoa powder, to serve.
3 tablespoons freeze dried strawberry powder
1 pack biscotti, to serve
1 bottle Vin Santo, to serve.



Put the cream in a pan over a medium heat, and let it heat up, not boiling just hot. As soon as bubbles appear add the butter, and clementine zest.


 When the butter has melted, pour over the chocolate pieces, whisking all the time. If the mixture splits don't panic, just add a small splash boiling water to make right again, it really does work.

Add pinch salt, and stir in your alcohol of choice. You could split the mixture and add different alcoholic flavorings at this point.


Once really smooth pour into a nice serving dish and pop in the fridge for about 2 hours to set.


Take the chocolate out of the fridge about 20 mins before you are ready to make your truffles. Have a few bowls ready with chopped nuts (hazlenuts, pistachios and almonds are great), the cocoa powder, and some freeze dried strawberry powder.


Have a teacup with boiled water ready, and two teaspoons, hand one to your lover or BFF, scoop out your chocolate mixture, shape into a ball, and have fun rolling them in whatever takes your fancy.


Serve with biscotti, the Vin Santo, or even vodka shots!

 It's that trans-seasonal time of year to stock up on wardrobe staples, luxurious basics, and three of my favorite things. 

Uniform navy, blue and white stripes, and tan.  Neither groundbreaking or revolutionary but, they are are a winning trio for effortless dressing (just enough trouble without trying too hard).

 Suddenly life is organized again and your wardrobe
 never felt so good. 

Now that's my kinda dressing.
